Avocado suggestions

Our friend who's just moved to Far Northern NSW has come back to Canberra for a couple of weeks with a car full of slightly blemished but utterly delicious avocados. We've got around thirty, in various stages of ripeness - which is a lot of avos, isn't it?

I'm happy to just eat them with a spoon and some lemon juice, but I bet some of you have some sensational avocado recipes - I'd love to hear them.

OOooohh, SO jealous!!

Avocado on toast, with lemon pepper
Avocado in cubes into any salad
Guacemole with lots of garlic

Don't like hot avocado really...

People always look at my kinda cat-lady cwazy, when I tell them I like avo's as a dessert.

During my 20's Wanderlust years, I lived in London and nannied for a Brazilian family.. the used to make this insane avocado mousse dessert thing.

Basically it's a ripe and creamy-textured avo blended with honey or sugar (sometimes with some cream cheese) and then chilled. Believe me, it's wonderful!

A more exotic one was taught to me by the live-in housekepper.

2 avos,
juice of 1 lime,
a splash of rum or bourbon
3 tablespoons of castor sugar.

Blend all the above to a smooth paste and then fold in to a cup of whipped heavy cream, chill and serve!

I am also a fan of avo smoothies

1/2 avocado
1 1/2 cups milk
1/2 cup ice
3 tablespoons sugar

Blend and scoff... It is sometimes served with some oatmeal in it for texture.


I've made avo icecream, with coconut cream and avo, which is wonderful as well.

this salad is sensational. grapefruit, beetroot, avocado and pita crisps. all using produce in season right now. Excellent with lamb.

I was an exchange student in Brazil, pg, and my host family were horrified that I though avo was a savoury food. I'm going to try that moussey arrangement I think, and grocer's salad looks delicious. And looky here! Chocolate pate with avocado!

Not a big fan of many sweet foods and the idea of sweet avo is spinning me out!
Hot avo also seems wrong to me
Don't forget to add some vegemite to avocado on toast- supreme :)

Huge fan of vegemite and avo toast, hungrygirl, particularly on Turkish bread which is then called a "Gallipolli" - classy, hey?

Something I got from my mum -

Technically, this is meant to be a layered dip in something like a quiche pan, but there's nothing stopping you from doing a mini version on some chunky bread. I think my mum calls it Aztec Clock

Base Layer - Combine and spread
1 tin of refried beans
Seasonings to taste (ground cumin, chilli, coriander seeds, bit of salt etc) or a packet of taco mix if you're uber lazy

Second layer - Combine and spread
Mashed avocado - 2 or 3 depending on size
Garlic to taste
A small carton of sour cream
Juice of half a lemon
Pepper

Third layer
Grated tasty cheese

Fourth layer
Diced red onion

Fifth layer
Diced red or green capsicum

My mum used to (probably still does) make this every time there's a BBQ. She always had to make two - one for the party, and one for the family to hoe into and pile onto toast etc. I loved it for breakfast!

Yum, we call that Mexican Layered Dip and it is divine... always a winner at parties!

This is what I had for lunch:

SLiced ripe avo. Dressed (drizzled ... well splodged really) with the best avo dressing in the world:

large glug olive oil
big clump ground cumin
large squirt of tommy paste

Whisk up until it's gloopy and season it.

dollop over avo - unreal.


ALSO - you must try raw vegan brownies (the avo makes the chocolate frosting)

This is a recipe to just have blind faith in. I' have never successfully defrosted them (they keep in the freezer) beacuse I eat them before they've defrosted!

Or you could just make a bowl of the frosting as a choccy mouse.
