Quick, lean recipes for one?

Suggestions - quick, lean recipes for one person?

I often work from home so raiding the fridge and eating lunch alone is fairly normal for me. I'm not a regular a sandwich eater and don't always want to eat leftovers. So I have repertoire of low fat things I eat, like little dim sum, home made soup, won ton soup, tuna salad etc. But I'm looking for new ideas, what do you suggest?

Here's an example of one of my favourite quickies:

    Cut two stems of Chinese Broccoli (Gai Larn) into short lengths and place in a container with a handful of peas and some boiling water. Seal lid to blanch veggies.

    Into a hot mini non-stick wok, break a duck egg and chicken egg and cut the yolks. When it starts to solidify, turn over loosely, then place the blanched veg on top and when the underside is firm, fold over and slide onto a plate.

    Into the wok put two tablespoons of masterstock and 2/3 a tablespoon of oyster sauce, a teaspoon of sugar and warm through, stirring until it thickens. Add a couple of drops of toasted sesame oil and pour over the egg. Top with fried shallots or spring onion.

that looks so YUM!!

Much better than wot I had for lunch :cry:

My fave "on my own-some" recipe is my Mum's "Egg-in-a-pot"

Grease a ceramic ramekin, break in a egg, top with crumbled fetta and some pancetta or bacon, and bake in a water bath, at about 150C for about 10 mins, or until the white has set.

Scoff with toasted pasta dura.
