Speak to me of GREENS

Somehow, I managed to get to be forty-something before I had 'greens' other than spinach. Honestly, I don't know how this could have happened. My mom is a hillbilly, and we grew up eating a lot of typical southern vegetables, but she never made greens.

I grew some this year...and when I went to fix them the first time, I called her, and she went into detail about how to fix them, how to season them, and how good they are. When I asked her why we never ate them, she paused, and said she didn't know. Weird!

I've done the traditional thing, with a bit of bacon, the greens, and some red wine vinegar. I love them that way, but I'd like a couple of other ways to fix them. Who better to ask than a board full of foodies? I would ask, however, that the recipes be fairly simple and frugal. Our grocery budget is rather small, so I won't be adding fois gras (is that spelled right?) or anything too exotic/pricey. I have lots of varieties of beans, lots of free-range homegrown chicken and eggs, lots of other veggies and such. I have a fairly killer spice drawer too. So, bring it on!

If it matters, I've got Swiss chard (silverbeet), beet greens, spinach mustard greens and regular old spinach. When it gets a little cooler I plan to set some Kale for wintertime.

I LOVE greens.

Love them love them.

I like to wilt them over some butter and crack loads of black pepper over.

Or stir fry them with some caraway seeds (I add smoked tofu to that but bacon would be awesome - and a bit of soy)

Or steam them, and add lentil bolognese over the top - makes a fab meal.

One of mine and Chimps's fave recipes is variations on this soup:

Fry up onions and add tinned toms, and can of white beans (or rehydrated - cheaper).

Break up some noodles and add.

Sprinkle herbs and a bit of stock to taste.

Then add shredded dark greens to the top and let steam down into the soup.

Hearty - tasty, cheap and bloody delicious.

Mmmm...caraway! I'll have to try that for sure, and I love the soup idea as well! I have all the ingredients on hand, so I'll give that a try when the weather cools off.

I like cracked pepper on everything, so I'm sure I'd like that too. Husbandinhat isn't wild about lentils, but then again, he won't eat greens either, so maybe that will be a Kitten and mama meal one day.

I bet greens would be great with polenta, eh?

Hm....hubby might actually eat that, especially if I sprinkle w/toasted sesame seed. (Now, I have to decide if I wanna share, hee hee)

Rinse the silverbeet, and shake off most of the water. Brown some slices of garlic in olive oil and then toss the thinly sliced greens in the oil until wilted. Put on top of a thick slice of wholemeal toast and top with a fried egg from your chickens.

I also love greens... and have done them with ham/ bacon, butter and all the good stuff in the past... would like to source/ grow some other types of greens, such as collard/ kale, mustard etc... I mostly use spinach and Asian greens at the moment, as most accessible in Australia...
