I loved the Lime and Watermelon chicken wings they used to do at Hard Rock cafe and have made a Lime and Watermelon marinade for ribs too... sounds really good, PG (and Furry)! Will def. be trying that come BBQ weather here!

Tonight, we are not having the Roast Vege Tacos that I had planned, and also roasted the vege's for when I had the oven on last night... they went into the freezer... we are having Cheesy bean nachos instead... easy, in the microwave, and DD was having them anyways...

Ah, blah... still awfully sick here.

But in the theme of getting my fussy DD to eat better, I made the effort and whipped up a quick Spinach & Bacon quiche, with organic spinach, eco-bacon, LF sour cream, organic cheese and on a gluten free organic mixed mash base (that I froze from last time, and it defrosted very well)... yes, you guessed it, she didn't eat it, and because she is still not 100% herself, I gave in and made cheesy noodles for her (those instant packet mix Cheesy Macaroni, that she LOVES and I usually hide the vege's in). I think the biggest challenge for me to get this family into full SOLE eating, will be her... :cry:

Got tomorrow nights meal sorted tonight too... Grilled Moroccan Tofu with Chickpea and Vege mash!

Moroccan Tofu sounds great Dixiebelle. Hope DD gets better soon.

Last night I cut a slice from some beautiful Mt Belleview Black Welsh rump, got out the moistened meat bat and inspired by re-reading my old recipe for Purple Goddess, made some Stroganoff with swiss brown mushrooms. A salad on the side featured Glenora salad leaves, roasted capsicum, tomato, parsley, and Red Hill marinated goats cheese.

Tonight will be panko crumbed venison schnitzel, watercress salad and Rakott Krumpli - Hungarian style scalloped potatoes.

Last night's dinner was a chicken toasted sambo. We WERE going to have the last of the Furry balls from the previous night, but Madame Mouse and Her Man dropped over and scoffed them as a snack. :roll:

And I was too bloody exhausted to cook anything else.

Tonight, we have 3 outta 5 kids home, so it will be spag, or a curry.. something I can whack on when I get home and set and forget.

Thanks SF, we are slowly on the mend here...

OK, last night turned out to be Moroccan Chickpea and Vege fritters, with sour cream and sweet chilli sauce. That is now the end of the Sweet Chilli sauce, so will have to look for an Aussie made version, or go without til I find time to make my own..

Tonight, is the Moroccan Tofu, trying it grilled on the toasted sandwich maker thingy... so far, so good! And whipped up a quick salad of organic carrot, apple, tomato, plus pistachio, pepitas, sultanas and figs... needs some fresh mint but no herb garden here just yet! Serve some hommus on top... we could have a nice glass of Banrock Station white shiraz, but ah, we don't have any and I am on antibiotics!

Tonight it was some free range chicken breasts cut in half lengthwise and marinated in lime juice, garlic and a tiny smidge of smokey spanish paprika. Fried quickly and served on salad leaves with red onion, slow cooked tomatoes, cucumber. And avocado of course! Had it with some mayonnaisey/yoghurty dressing and baked potatoes.

Last night was a Leek and Blue Cheese tart with a polenta base. Made most of it in the microwave, then finished off for golden brown-ness in the oven (and cooked some muffins with DD whilst I had it on). Have blogged it, will publish tomorrow though (just blogged my Raising Eco-babies article on there and want it to get some 'air time'! LOL)

Night before, Organic porridge...

Thought it was time to resurrect this thread!

Tonight I'm making Pad Thai, that's flat rice noodles fried in the wok with chicken, a few small prawns, heaps of Asian Greens, a basic naam jim paste (lemongrass, galangal, kaffir lime leaf, shallot, ginger, garlic pounded in the mortar and pestle with palm sugar) tamarind, fish sauce, light soy sauce, a splash of master stock and finshed with bean shoots, tons of coriander and smashed up peanuts. Served with lime juice and chilli sauce on the side.

While this is being done I have a stew, made with gravy beef, a mire poix of celery, carrot, fennel and onion that will cook in the pressure cooker with beer, to reheat for dinner tomorrow night.

It IS time to resurrect this thread - I need ideas, people!!

Now I'm the one who is sick, in addition to being prego and having gone off meat. Which doesn't leave many ideas for feeding my very carnivorous partner. :roll:

It's beautiful and sunny and WARM for once here, so tonight I'm determined to do a really super bbq. But my brain is empty - help! We don't do pork around here - Monsieur is Muslim. I'm sorta thinking about going hunting for some lamb mergez sausages one of the grocery chains does around here, but first I'm going off to my fave grocery store http://www.foodsmiths.com (for those interested in my idea of heaven) to see what they have in the meat dept. I was also toying with the idea of jerk chicken and salad and __________. Not sure what the ____________ will be, but I'm working on it. If I'm going to do the jerk, though, I need to get marinating....

Jerk Seasoning
2 tsp onion pwd
1 tsp sugar
1 tsp crushed red pepper
1 tsp crushed thyme
1/2 tsp salt
1/2 tsp ground cloves
1/2 tsp ground cinnamon
Combine in mortar and pestle, store excess.

I've been using this spice blend for a few years; ever since I got back from a fantastic trip to Jamaica where we ate jerk chicken with fries at 2am every night. *dreamy sigh* However, it's still not perfect. I need to blend this spice mix with more ginger, some Jamaican allspice, and I think it needs a hit of mustard powder. To that I think I'll try adding some molasses and fresh lime juice to make the right consistency of a rub. And I think I'll use chicken thighs tonight; it needs more fat than breasts have, and a longer cooking time....yes....this might work well......
