Alright, so I might have created a monster. I can't seem to keep my stuffed up nose out of the dish holding the marinating chicken. I went a little crazy this afternoon and made what smells like The Best Jerk ever. I did a search on recipezaar and found a few good base recipes to assemble my end result from - the addition of lime zest and rum were certainly good ideas. I almost don't want to cook the meat tonight, because I don't feel it's going to have sufficient marinating time. But I also won't be able to wait to taste those delicious chickeny bits!

I just put a whole pineapple on the grill, it should be there for an hour or so, and in addition I'll be making a salad and some spiced wedge fries, I think.

If the jerk recipe comes out okay, I'll post it. *IF* being the operative word here, kids. ;)

I'm going to be making our-style nachos today. I'll cook up some beef mince and kidney beans in my half-arsed refried beans manner, top that with some cheese, sour cream, coriander and chilli sauce (home made, of course) and we'll use heated corn chips to scoop it up with.

I much prefer nachos this way as the chips don't get soggy. Also if you want to extend the meal you can put the nacho topping onto a bed of rice or cous-cous which turns this into a very frugal meal.
