Using Persimmon

Hi All,

I've just bought a house and inherited two persimmon trees, and now have a whole lot of persimmons around the place. I've had a look on google and it seems Americans use them for pudding and sweets, but I'm wondering if anyone has experience of using them for preserving (drying, jamming) or cooking themselves?

I think a lightly flavoured jam with cinnamon, vanilla and star anise would be great, but I would be totally winging it!

I wonder if you could find a recipe - if such a resource exists - in a Middle Eastern recipe book? The only reason I say that is my FIL works in a mid-east grocery store, and he was telling me about all the different types of jams and jellies available there; things like eggplant jam!

I've only eaten a persimmon once, and didn't enjoy it all that much. Perhaps it wasn't ripe/"good" as they are not something that grows here naturally. All I remember is the feeling of my mouth drying out from it's bitterness.
